About rooting broken fruit tree branches; most fruit trees are grafted. The fruit bearing variety is grafted onto a variety with superior disease and rooting characteristics, often more adapted to growing in a specific area. So if you get a sucker, whip or a branch to root and grow, it might not do as well as the parent tree. It might be much more susceptible to things like nematodes, root fungus, or whatever and it might have wimpy roots. Just something to think about.
