Make friends with people on the Keto diet. They can't get enough eggs!

As others have said, we scramble a bunch each week to feed back to the chickens and our other birds. I mix in some herbs too.

I found an hardboiled egg makers thing on Amazon for pretty cheap.
I also found a hard boiled egg maker. It's very helpful.
 
I make breakfast burritos.
Deviled eggs are awesome!
I boil eggs for us, the dogs and chickens.
I make pound cake (great for strawberry shortcake)
Some brownie recipes call for as many as 5 eggs.
Quiche is a good one. So is scrambling and freezing for breakfast sandwiches when the hens are on winter break.

This fall I am going to freeze eggs in hopes of making it to spring without buying eggs.

I watched a documentary on preserving eggs. The salt method was interesting.
 
I believe they crack them into muffin tins (?) And freeze them like that.
I've got bantams, so I crack two at a time into a muffin tin and freeze 'em, pre-scrambled, but my favorite way to use up extra eggs is to pickle them with beets. I'd share a recipe, but I don't really have one. I kinda make it up as I go along, each time. There are lots of good recipes online, but the best are simply a mix of beets, juice, vinegar, sugar and a bit of salt. The best part about pickled eggs is that, the longer they sit in the brine, the prettier (and tastier) they get, so there's no rush to finish them up! On the rare occasion that I end up with too many, or when it's time to refresh the brine, I take 'em to our Coffee Hour at church. They disappear faster than a teenager on coop-cleaning day!
