What do you like to do with your eggs?

like shawthorne, I steam for boiled eggs and drop the hot ones into a cool water bath. The intranet said the water bath was to make them easier to peel. It works. The "egg" contracts faster than the shell and pulls away. Ain't physics great!

And that is why you have to peel while still warm in the ice bath. At first I would get distracted and leave them in the ice bath, then try to peel later, that totally did not work.

When I do mine, I toss them in the cold water and then crack and throw back in the water while still warm, it actually sucks some of the water into the shell which unsticks the shell from the egg.

After boiling and cooling, I put them in the frig for later. Peel fine as long as you quench to room temp.

What is this about fresh eggs not boiling right? Letting them dry makes sense to shrink the internal space. Any other details? I may boil some fresh ones to see.

If you boil older eggs, they peel easier. I just boil and put them in the frig to peel later, too.

I averaged 10-12 eggs a day so we usually gave them away to neighbors, friends and family. There are a variety of uses if you find yourself with a surplus for you to try:
-selling locally
-egg heavy dishes (i.e. French Toasts or Frittata)
-donate to food bank (some are picky and want to know where they came from, others are gracious either way)

I've never had animals to feed them back to and didn't feed them to my chickens. It was just personal preference for me. I fed my birds mealworms for proteins along with other cool treats. Initially your pullet eggs will be smaller so you'll find yourself eating them all, but as they grow you'll find yourself with leftovers.
