like shawthorne, I steam for boiled eggs and drop the hot ones into a cool water bath. The intranet said the water bath was to make them easier to peel. It works. The "egg" contracts faster than the shell and pulls away. Ain't physics great!

When I do mine, I toss them in the cold water and then crack and throw back in the water while still warm, it actually sucks some of the water into the shell which unsticks the shell from the egg.And that is why you have to peel while still warm in the ice bath. At first I would get distracted and leave them in the ice bath, then try to peel later, that totally did not work.
If you boil older eggs, they peel easier. I just boil and put them in the frig to peel later, too.After boiling and cooling, I put them in the frig for later. Peel fine as long as you quench to room temp.
What is this about fresh eggs not boiling right? Letting them dry makes sense to shrink the internal space. Any other details? I may boil some fresh ones to see.
