I now make all our bacon, ham, ham hocks, tasso, sausages, prociutto on and on and on we have not purchased any smoked or cured products since I started this

this book so worth the money and will make your smoker into the most amazing investment ever!

everyone was given bacon and ham hocks for the holidays this year and it was so nice for a change to make and give those instead of sweets
