Call me weird and western but my potatoes are super basic and not very mashed. I scrub them, peel half of them, chop them, boil them, season them with everything spicy and pungent, mash them until they're chunky, cover them in cheese and let the cheese crisp, and then make them swim in homemade herb butter

Those are called smashed potatoes here. I like those too.

Define spicy and pungent. Mustard? Tobasco? Curry? Salsa? Sounds good!
