Since we're talking about the best little bulbous flavor bombs...

This steak topped with crispy garlic cloves was just the best, I seriously could've eaten those things like candy.

And the escargot was in a dish of butter that tasted more like garlic juice. It was just intoxicating🤤

Cajun cooking is derived like soul food. It's what us poor people eat.
Not fancy, but can be.
And everyone's Momma makes it different. There is no wrong way.
I asked Mom how to make gumbo and she said get what's in the frig and put it in a pot.

How does a cajun make a cake?
First you peel an onion. More if you are expecting more than just the family.
That's what I love about regional foods, it's what people had access to, just 'making do'.
Family recipes are either the everyday food or the once a year special food.

I have some black aged garlic, it's sweet like a prune but garlic. Is that an innocent garlic bread in the snail pudding?

It's some kind of bread stick, I didn't eat it. I would imagine that it tastes good since the crispy milk solids on top were all over it.
