Have you considered fruit leather?

Apple "rings" can be dried on racks set on cookie sheets in a very low oven with the door propped open to let the moisture escape. If you don't like the natural color, dip in a little lemon juice diluted with some water to keep them pretty. When they feel like raisins, cool, bag, label and freeze.

I hope this helps you preserve some of your "bounty".

Well, I just finished some pie filling. I think I will dry some tomorrow. I am enjoying this.

I am definitely going to make some apple butter soon....since I would NEVER eat it, it will be great for Holiday gifts.

Grind em and drain the juice and squeeze it for fresh apple juice. I froze 10 gallons last fall. REally goes good in hot weather!

Apples can also be used for entertainment- stick them on the end of your very bratty goat's horns and let the horse pluck them off. I am not sure that this won't create problems, however, done every once in a while when you are mad at the goat really makes you laugh hard and keep you from putting him up for sale.

My husband adds "they make good ammunition in a potato gun as well". This can also provide entertainment if you have a dog that will chase them down.

We made LOTS of apple sauce with our excess apples last year. The kids couldn't get enough, and when we ran out, they refused to eat the store bought kind. Homemade is just sooooo much better.

Oh, thank you, I was going to google for a good apple butter recipe, now I will use yours.

Yeah, I know how it is. My kids won't touch store bought applesauce (never have) but they eat homemade like crazy.

I keep having to make some fresh for them to eat because they beg to open the jars.

I tried to tell them it would be pointless to can it just to open in a day or two but they don't seem to believe me.
