Have you considered fruit leather?
Apple "rings" can be dried on racks set on cookie sheets in a very low oven with the door propped open to let the moisture escape. If you don't like the natural color, dip in a little lemon juice diluted with some water to keep them pretty. When they feel like raisins, cool, bag, label and freeze.
