What to do with bazillions of apples????

I don't think an apple dumpling is like a chicken dumpling..although I can't say that I have ever seen a chicken dumpling....I have seen chicken and dumplings ( little balls of dough in chicken stew or soup).

APPLE DUMPLINGS

2 c. sugar 2 c flour
2 c water 1 tsp salt
1/4 tsp cinnamin 2 tsp baking soda
1/4 tsp nutmeg 3/4 c shortening
1/4 c butter 1/2 c milk
6 apples


Make syrup out of sugar,water,spices and butter. Pare and core apples, cut into fourths. Sift flour, salt and baking powder, cut in shortening, Add milk all at once and stir until well blended. Roll dough out on floured board to 1/4 inch thick, cut in 4 inch squares, Arrange 4 pieces of apple on each square place a dot of butter on top of apples and sprinkle generously with additional cinnamin and sugar. Fold corners of square over and pinch together edges. Place 1 inch apart in baking dish. Pour syrup over all and bake for 35 minutes in a 375 degree oven. Serve warm with ice cream.

I have fond memories of my great grandmother's blueberry dumplings. She lived in New England and I'm in WA State. People out here have NO idea about fruit dumplings. YUM!!
 
I made some Apple Mint Jelly, it was extremely good. The recipe is in the Ball Canning Book.. Just another thought for a variation on apply jelly.
 
I have also been gifted with LOTS of apples. I have been making sauce and butter. I have been sharing that with those who gave to us last winter when we had to choose between paying bills or buying food regularly.

I make my butter in the crock pot. Cook it on high for 6-8 hours stirring every 30 minutes or so and removing the cover after 3 hours. Its easy and you don't have to worry so much about it burning.
 
A cider press could definitely be made with a car jack. I don't know WHY they are so expensive -- they are really quite primative.

Or why not just make your life easier and borrow a juicer from someone. They are so popular now that someone you know must have one taking up space in their kitchen....

We made cider and pressure canned it 2 years ago. My kids did it (they were 5 and 9 then - that's how easy peasy it is) and the cider was soooooo gooooooooodddddd.

You could just dry slices in the oven. I think they keep for quite some time, but couldn't say for sure as my kids eat them so fast.
 
Cook up another batch of applesauce and make it into fruit roll-ups by dehydrating it. So yummy!
I also like to make up the whole pie: crust, filling, and all and freeze the whole thing. Line the pie plate with foil before you put the pie in, then after it freezes just lift it out and wrap it up and pop in a large freezer bag. I figure that at some point I won't have the time or ambition to make pie, but I will have some spares waiting. Perhaps when I am pooped out after a Thanksgiving marathon...
I also love spiced apple rings made with red hots. I don't know if you already mentioned that, but it is worth saying twice! Enjoy your bounty!! I have a few wild apple trees that I am going to try to use. I think that they might be a bit tart and full of imperfections though.
 
Yeah, spiced appled rings are actually the next thing I am making.

I like the idea of making fruit rolls with the applesauce. I have concentrated passion fruit juice and mango juice I could use to flavor it, too.

Oh, to me, tart apples are the BEST!! I can't stand sweet apples.
