1/2 cup sunflower seeds
1/2 stick butter (melted)

Break noodles and place in 9X13 pan. Add seeds & butter. stir to mix. Put in 400* oven and toast until lightly brown. Cool
Dice Bok Choy using as much of the green as you wish. Put in bowl and add above ingredients & stir. Add dressing JUST before serving

Dressing:
1/2 cup Olive Oil
1/4 cup vinegar
1/2 sugar
1 TBSP soy sauce

put into lidded container and shake well. Add to salad RIGHT before serving.

Tastes very asian and REALLY good. Lots of flavor.

Chicken, Eggplant, and Cabbage Stir-Fry

Ingredients:

4 4 inch long Japanese eggplants, cut in rounds
1 cup chopped cabbage
1 to 3 ounces shredded cooked chicken
1 pkg chicken ramen noodles
1 tsp canola oil
4 tbl Memmi soup base

Cook noodles acc to pkg directions.

In a wok or pan, heat the oil. Lightly cook eggplant, add chicken just until hot, add Memmi to taste, then throw in cabbage just until it's hot. Serve over strained noodles with Memmi.

Sub whatever veggies you have on hand. I love Memmi soup base in stir-fry.

Tonight I made momreda's Egg Drop Soup with ramen noodles. It was very good! Just hit the spot on a cold, wet, wintry day! I used a box of chicken stock because I had it on hand and I added some diced chicken left over from making chicken and dumplings this weekend. A really good soup made more substantial by the noodles and the vegetables plus the great seasonings. And really quick too! Thanks for this excellent soup recipe!

Divide ramen noodles evenly in center of each of the 4 pieces of aluminum foil. Stack the following ingredients on top of noodles, in this order: mushrooms, shrimp, onions, scallions, red pepper flakes, and salt. Pull sides and corners of pouch up to form a small basket shape leaving an opening at the top to pour in liquid.

In small bowl, combine vegetable broth, mirin, soy sauce, and sesame oil. Distribute liquid evenly among packs. Press foil together, leaving a small opening to allow steam to escape. Place on cookie sheet and bake in oven for 15 minutes. Serve immediately.
