here's one of my favorites:
Bok Choy Salad
1 head of Bok Choy (it's a type of chinese cabbage)....I had never heard of it before making this...lol
2pkgs Ramon noodles (omit the seasoning)
1/2 cup sunflower seeds
1/2 stick butter (melted)
Break noodles and place in 9X13 pan. Add seeds & butter. stir to mix. Put in 400* oven and toast until lightly brown. Cool
Dice Bok Choy using as much of the green as you wish. Put in bowl and add above ingredients & stir. Add dressing JUST before serving
Dressing:
1/2 cup Olive Oil
1/4 cup vinegar
1/2 sugar
1 TBSP soy sauce
put into lidded container and shake well. Add to salad RIGHT before serving.
Tastes very asian and REALLY good. Lots of flavor.
