What was your dinner tonight?

Last night I made Enchilada casserole, beans, mexican rice, Guacamole, sour cream, and Margaritas!

Tonight I am cooking sweet italian sausages in wine, which I will put over Rigatoni with marinara sauce. Also will have Garlic bread and green beans! YUM

We eat a late supper, so it'll be another hour or two before we eat. Tonight is meatloaf and mashed potatoes, something we haven't had in awhile.

Last night was Taco Soup (out of the BYC cookbook) served with tortilla chips.

Tonight was Pot Roast w/ carrots and potatoes and bread

Being that it was 'Survivor' night, I made the munchkins Sloppy Joes. Their favorite. I always cheat on 'Survivor' night and make something that's dang near instant.

Tonight we're having baked salmon (with lots of dill and lemon), Uncle Ben's long grain and wild rice, and salad. Yesterday, we had pizza!

Hubby and I both really enjoy salmon, and I like to prepare it simply, no spices except dill, and just a bit of lemon. No butter, just the fish. The dog like the leftovers too

With just the two of us we can make it in the toaster oven! That's nice in the summer when heating up the oven makes the whole kitchen too hot.

This meal is easy on our budget too, it's only about $5/person.

Last night I made spagetti and homemade rolls. My kids actually cleared their plates. Yayness.
