Whatcha Making for Supper?

Making two extra dinners today.

First, I'm making Guyanese Pepperpot, which is supposed to sit in the refrigerator for 2 to 3 days before eating (after it is cooked).

Then I'm making an egg casserole that is supposed to sit in the refrigerator for 8 to 24 hours before going into the oven. Not sure why. Sounds odd to me. But, I want to try it out before I have company this summer as I'd like to have some quick and easy breakfast ideas. We'll be having it for dinner tomorrow evening.

There are no rules against eggs for dinner, right?

Well, the Guyanese Pepperpot is made, and it tastes interesting. I think cassareep is an acquired taste, but without it this would just be stewed meats. It's not bad, just a new taste. I hope it mellows out in a couple days of sitting.
 
Probably more work than what it's worth, but I like it now and again.
