Whatcha Making for Supper?

I love spaghetti squash!!! I have a great recipe for twice baked spaghetti squash. Now I think I'm going to have to pick one up. We also like it with simple marinara as a side spaghetti dish.
Yes thats how i did it tonight like a twice baked where I mix everything up fry it in the pan back into the "shells" and then top with cheese and bake till the cheese is bubbly! Also same i love it for spaghetti squash with meatballs haha I wish the roasted squash stored better. Its just me so my giant ones are always too much but I pick some small so they're closer to a single serving plus lunch the next day haha

All I can say is lucky you. If I had a bumper crop I'd be eating it every day. No room for it in my garden, but wish I could grow it. Will it keep in the cellar for a while like other squash and melons?

Spaghetti squash loves to climb so you only need a few inches of bed space for the main stems if you send it up a trellis. I used a 1 foot wide 6 foot tall arch trellis between 2 raised beds and less than 1 foot of bed space to end up with about 15 squash for the season. (Sent cukes up the other side of the arch) And yes they last like 6ish months in a cool dark place but my basement is cat box territory and dont like storing food down there 😂 so I force them on my friends and family and eat as many as I can for the month or 2 theyre good out on a kitchen counter

Yay! Here's a picture of what I did (this is from this weekend I already ripped everything out for the winter) the trellis is one of the cheapo metal click together ones from wayfair.
