Whatcha Making for Supper?

Chicken adobo, sauteed green beans, steamed rice....pork lumpia as an app.....birthday cake for dessert. We are celebrating our son's 25th birthday tonight, and that was his selected birthday meal.

Here is the casserole my sister made. I had a piece and a half for lunch. And it will probably be supper tonight, too.

It has chicken in it, which was good, but I would love to see some shrimp in it, too. I'm just not sure how to keep them from overcooking. Or making the dish more of a seafood dish if I add them raw.

Last night's supper. Good thing I had some Del Monte green beans in the cupboard. All my fresh veggies had turned before their time.
