It's one of those days. I'm terribly bored so I figured I'd make a good dinner but just don't have any good ideas. I have chicken, eggs, potatoes, cheese, onions....everything to make a good dinner, but no imagination. Throw me some ideas you guys...seriously my brain is mush today.
 
Sorry I can't help you with those ingredients.

Went fishing today, so we are having fresh blue gill filets, with ho-made french frys and ho-made rye bread. Prolly a couple cocktails first, for the fun of it!

How much effort ya wanna expend? I have some ideas......

Simplest:
Cut up the potatoes into small pieces, toss with olive oil, salt and pepper (or Jane's Crazy Salt) and rosemary/thyme/whatever. Roast in a 400-425 oven for about 30-40 minutes, turning a few times, until golden brown. In the same oven you can roast your chicken, bone-in or bone-out. Get it marinating before you cut up the potatoes in some vinaigrette or lemon juice, s & p, and olive oil. Serve with a salad or green veg and you'll have a delectable meal.

More labor labor intensive ideas,... a potato gratin w/cheese maybe.
 
Thank you Seachick The potatoes in olive oil and herbs is an excellent idea. I'm assuming I should leave the skin on the taters??
 
I leave the skins on because we have some gorgeous local organic taters with delicious skins.... but this method works great peeled or with skins. I shuld mention that it works best with "all-purpose" potatoes (yukon golds are our faves!!) and I have never tried it with the fluffy baking-potato kind -what are those called, russet?- but I bet it works fine. It's our family favorite. Neil and Olivia BEG me to make it; they's never eat rice, pasta or any other type of potatoes if they had their choice!

Well I have them in the oven Seachick. They smell wonderful. I am also doing halibut and homemade tartar sauce. Thank you for the ideas. I seriously was just sitting here staring out the window spinning my wheels.

I also thought about home made mac and cheese but I don't have a great recipe for it... I like the baked kind. I figure I'll get a recipe off the internet.

MissPrissy I love breakfast for dinner too!! we have that a few times a month. Just can't wait for the girls to start laying eggs for me!!! argh...

BAKED MACARONI AND CHEESE

3 cups uncooked elbow macaroni
3 cups scalded milk
5 tablespoons butter
5 tablespoons all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon black pepper

8 oz. grated cheddar cheese (sharp gives extra flavor)
2 cups fresh bread crumbs
1/4 cup grated Parmesan
1 tablespoon butter, melted

Cook macaroni in large pan in boiling water until tender. Drain and return to pan.

While the noodles are cooking, heat the milk until it starts to steam but not until it boils.

Melt the butter in a medium saucepan over medium to low heat. Whisk in the flour, salt, pepper and dry mustard and cook for at least 2 minutes. Whisk in the hot milk and cook until mixture thickens and begins to boil. Remove from heat and stir in the cheddar cheese. Pour over the macaroni and stir together.

Pour into a greased 13X9 inch casserole. Mix the bread crumbs, Parmesan and melted butter together and sprinkle over the macaroni and cheese.

Bake at 375 degrees for 30-45 minutes or until bubbly in center and golden brown on top and sides. Let cool about 10 minutes before serving.
