Hi,

I need help AGAIN! I previously posted a question about canning tomatoes (I only plant three tomato plants a season but I get OVERLOADED with tomatoes and give so many away) and received answers that it is best to do in a water bath canner. I have been looking into other options and a friend of mine suggested freezing them. I did research on the subject and it seems to be a good idea for me, as I have plenty of freezer space but not much shelf space. I also don't have a water bath canner and I looked through my pots and none seem to be a suitable size.

But I FINALLY broke down and bought a brand new freezer last December after suffering with one that was given to me when it was already about 30 years old! It was now over 40 (yes, FORTY) years old and had turned into an "ice monster" (always seemed there was more ice in there than food no matter how often I defrosted it). So I am THRILLED with my new frost-free 21 cubic foot freezer and thought I could put it to good use this summer with the tomatoes!

From what I have read, ZipLoc freezer bags are a good idea but vacuum sealing is even better. I am considering buying a FoodSaver but have read reviews on different models and they vary greatly. So I was wondering what your experiences have been. I have seen one in Costco but, at the moment, I have no idea what model it is. I feel it would be a worthwhile investment, as I'm sure I can use it for many other things besides the tomatoes, especially since I have a decent freezer now!

I plan on placing the tomatoes in boiling water for very short time and then submerging them in ice water (to remove the skins) and then squeezing them lightly to remove most of the seeds before freezing them. If anyone has any other suggestions, please let me know. But what I really need information on is the FoodSaver.

Thanks for your input!

ETA: I forgot to add that the second one I bought (the black & silver one) has a dry/moist button on it and I really like that feature!!
