Who got the turkey carcass to make stock??

MARKET my pickles?!?!? Are you CRAZY??? LOL You will have to fight my 10 yr. old son, DD's. DH and neices and nephews AND a neighbor county cop!. LOL They call me the "pickle lady" around here. I have to hide the stuff for X-mas presents or there wont be any left. If you decide to can, I'll give you my recipe. Or the next time you make a trip to Kansas City I'll get it to you. I could mail you one if I had enough, hmmmmm? How bad you want it??

Next time you are through this part of the world, stop in. My family fights over my bread and butter pickles.
I will teach you how to make them.

As for canning, if the power went out and you have stuff you canned, you will never have to toss everything out of your freezer.

I only froze my broth because I have a ceramic top stove and it was snowing, so I wasn't about to go put the canner on the turkey fryer base.

I've read enough canning threads to know it's time to buy a pressure canner. I just don't think I could get over the vinegar smell. Maybe I'll just can them outside. Yeah.

I'm ok there since I'm a generator tech and have a propane generator backing up my entire house plus lots of other technical goodies I won't bore you with. I could run my freezers for weeks.

Uhhhh.....PC...you ARE one of the most popular guys here. I know Debi and the other girls like to give you a hard time (by the way where is Debi tonight?)
If you come to KC in July and Aug. I can teach you how to can my dill pickles. We are an hour South of KC though.
If you can handle an onery 10 year old boy (I know you have one too) then you should make it okay here.

If you can keep electricity going for your freezer and have the room, I guess there is no need to can. It is a lot of work but rewarding!

I've pondered the canning thing before but never got past just talking about it. I think it would be rewarding and fun to do it. Plus, just because I have the chest freezer doesn't mean I wanna run it. It's empty and unplugged. My regular freezer is packed. Another thing that sounds very helpful to me is the ease of use. My dogs get stock in their food every day. Defrosting large containers and letting them sit for two weeks in the fridge is a pain. Quart bottles would be so much easier to deal with.

This has been a good thread. Now I hope no one shows up with another turkey carcass.

Ok I need some help???? I have Never made stock from the turkey carcuss...Ive made soup from the leftover meat off the carcuss and leftover juices,but never stock.Could someone please help me out,I have the carcuss in the frig... .Also the worlds best pickle canner;do you give out your recipe????I can alot,even pickles..Mine are never "crisp" always soggy.In reference to all the other posts,I do can and freeze alot of things but I never would have thought to can the stock,great idea.How much stock to you get from the carcuss of a 15lb bird?? Thanks for your help.
