I do wash my eggs right before I sell them. Though sometimes I wash at gather, it just depends on how bad they are. I have one girl that lays a soft shelled egg several times a week and it usually ends up all over th other eggs.
I do not wash my eggs.. I wont sell any with major poo on them but I refuse to wash them bloom off of them before selling.. If any of mine get yucky i just wash and use them right then...
Bloom is like the protective coating that is around the egg. It keeps bacteria and germs form going into the shell and if the egg is washed, the bloom can ge washed off too.
I wash all my eggs, eating or hatching. I have great hatch rates. Not one egg ever leaves my farm with Poop on it. That would be gross and unsanitary, and go against Biosecurity rules. I can gently wash the eggs in warm water & antibacterial hand soap without washing off the precious "bloom". The eggs are still slightly slimy, proving the "bloom" is still there. Nasty eggs are just that- NASTY. I hate receiving dirty eggs.
I only sell clean, unwashed eggs. If some of mine have a small smear (and it's just a touch, not even obviously poop, because they don't poop in the nest boxes where they lay), I keep those for my own use. Those I wash immediately before using them, not until.
We keep our nesting boxes really clean which helps a lot. But if there is a speck of dirt or poop on any egg it is washed clean. I also advise my customers to rinse the eggs just before use to get any dust off - we use DE in the nests and sometimes to fine dust gets on the eggs.
I got duck eggs from a fellow farmer once and they were so dirty and gross it took me a few days to get up the nerve to wash them and eat. Yes, I have a bit of germaphobe in me.
We wash all our eggs with an Oxime solution that will kill any bacteria in the eggshell. It's a quick process, weak solution in a spray bottle. If there's a bit of dirt or poo on the egg, we scrub them with an old toothbrush soaked in Oxime solution. Works pretty well.
