Why are grey chickens called every other color but grey?

What breed are they, they're beautiful. No, no, don't tell me . . . my list is long enough, lol.
Can I just say that they are excellent egg layers, docile and friendly (good roosters) dual purpose birds and lay in Winter (when not moulting)? Hardy heritage breed. Huge eggs.4-6 a week per hen.
We get about 10 hrs of light a day in Winter and apparently it's enough for them. My mature hen laid her first egg after moult on the Winter Solstice!! I love them.

Our winters are practically non existent, more like a long fall with cold damp precipitation. If it snows, like last year, we'll be talking about it until it happens again in 5-7 years, lol.

Might have to get some of those! Temperament anything like the speckled Sussex? Favorite hens here.

Absolutely! Next on MY list is actually speckled sussex.
I've owned other breeds.
Sold on Sussex.
These two colours (the CS and the speckled are my favourites)
 
On the subject of 'names for colors', so not exactly a topic change: ORANGE, so often described as RED. People don't like calling any critter orange? I'm thinking dog especially.

I find the genetics behind orange-ish chickens and the words used to describe them really confusing.
