Why do people keep Heads & Legs

All this gross stuff..........anybody out there ever eat lunchmeat? or weiners? or sausage? I guarentee you, You have eaten a whole lot grosser stuff than chicken feet and heads. LOL
 
Americans, myself included, seem to be pretty wasteful in regards to what parts of an animal get eaten. I think it has a lot to do with the "speed" of our culture. There's a lot of time and patience that goes into making something palatable out of the sinewy pieces on an animal. In my area less coveted pig parts still get made into cracklins, souse, scrapple and so on. You usually don't have to fight for a place in line to get it anymore though. I thought about doing something with the feet off the rooster I recently butchered, but I figured wife and kids might pass out.
 
I have eaten chicken feet before, they were pretty good. I cooked them like general tso chicken.

But, my friends butcher chickens quite often, I keep the heads and feet for my ferrets. They love them.. And the feet are also good for my arthritic beagle
