For all the reasons stated above, plus, in the off season, I make bite sized deviled and pickled eggs - they're a big hit around here! Besides, my silkies and bantam cochins are like the energizer bunny with their laying in the colder months - they keep laying, and laying, laying while all my LF slow down dramatically or stop altogether. It takes a couple/three eggs to make a decent sized sandwich, but they taste just as good as the big eggs!
