Why stop hens from starting to lay

I saw somewhere saying that they were trying to stop their hens from starting to lay their eggs. Why? It was mottled houdans that they were trying to stop from laying. Is it because it's healthier from them to be older before they start laying? Does it help them look better? ( be better show birds )
