Wisconsin "Cheeseheads"

Ours is going to Nilssen's in Clear Lake for summer sausage or to Louie's in Cumberland for Hunters sticks. He ate the backstraps cooked on the grill tonight.
I guess Nick had them do 1/4 links, 1/4 summer sausage, 1/4 steaks and rest burger, sure wish i had been with him as he got no roasts what so ever, ughs. At least hope he told them we'd pay extra for no taloe! Who knows, find out when it's done I guess. I know if I get one this season I'm doing it myself.

nice deer,, I never took my deer to a processor .. I just don't trust them to give me my own meat back.. I am very particular how I handle my deer after I kill it..
as far as I am concerned, I could grind up the whole thing.. excluding the tenderloins and ribs..

I am making some drawings for my plucker tonight.. I should build one a month so that I would not have to try to recollect all the dimensions each time..

I am debating whether to use pine or oak.. leaning toward the oak as I did in the last two..

We trim it up and bring the meat in, but I doubt we get our own back. We will keep one from rifle season and cut and grind it ourselves. I just like the bow season ones to go in for processing so we get them back earlier. Louies will have it done in January. They are just that busy.

JANUARY !!! we would have ours half eaten by that time,,

If you ever saw how some people mistreat the carcass, you would not want their meat mixed with yours ..

I have a heavy duty electric grinder.. I can grind up a deer in a very short time,, and there aren't any bone chips in the ground meat,,,,,,and no tallow ..
 
I have a nice meat grinder, I just don't know how to make summer sausage or those delicious hunters sticks from Louie's. We are really picky about the meat too. No skin, hair, tendons or fat allowed in there. I know when we brought our mule deer in they had that meat labeled very well. They didn't want that getting mixed in with anything else. lol

My dog has a huge bag of scraps to eat now. A friend came over tonight and said he knows a guy that would cook our waste up as "stew meat". No, that's dog food. :) The carcass will go in the chicken coop tomorrow. They will have a great time picking those bones clean.

I have ours in with the chickens and when some people come over they always ask questions. Why is that in there? You can feed that to them? Or Eww that's so gross. I just laugh, with all that fat that was on this buck those chickies are having a hay day eating away at it.

I have done all the processing of the deer here until this year. I am just as picky as you Yvette, if I find a hair in my meat I won't touch it again for months. And I know if I do it, it's done clean. But Nick doesn't trust me I guess to do "his" deer so be it he can pay to have it done, least he's paying for something finally. And Jim, I agree with not getting your own meat back. I honestly don't think they label yours with your name and you get back that way. I sent in a sheep once and I know I got some badly processed veni back one year from Whiskey Ridge in Radisson, ended up giving it away to the neighbors.

Yvette, did you have fertility problems when you had SFH or was it just eggs you ordered that were shipped that was the problem? Out of the 20 eggs I bought only 5 are fertile and the lady swears all hers were. I know my drive to get them and home never shuffled them one bit so I won't believe it was me who caused it. I only had one egg from the hen so far and she stopped. Probably partial to do with molt and weather.

Not one egg from the WW yet, kinda depressing. None of my Ameracaunas are laying yet either since molt/fall change. I have some lights but I'm assuming not enough. Just haven't had time to get the other lights all hooked up in the coops yet. Just finally Monday got all the birds but the 2 ducks and lone EE moved over to the back 2 coops. The Light Brahmas are growing so fast, can't wait for them to start laying. I have so many to grow out that I won't see eggs until March or later. The Foley BLRW are slowly starting to lay, set 6 eggs lastnight. The lone SS hen had been laying but now stopped again. Wish those girls would just get back into the funk of things and give me eggs. I have a total of 18 girls and lucky to get an egg or 2 out of all of them. My BLRW Bantams won't be ready for some time, does anyone know if they start laying late like the LF? The only Bantams I've had are BO, Silkie and Cochins and they all layed quite early.
 
I had 2 shipments come with SFH eggs. One was a mix with orp eggs. 2 were sent, one hatched. The second time, from a different breeder, I had 6 and 1 hatched. One super deformed one made it to lock down. I ended up with 2 hens,.so never bred them myself. I have one left. The neighbor's dog killed the other.

Well I bought a Pullet/cock pair, 4 chicks and 20 eggs. The 5 eggs are doing good the rest weren't fertile and lost one of the chicks lastnight. Not sure as to why it died, just wasn't growing as fast or thriving like the other 3. I am just hoping for a nice little breeding flock out of them all. I paid $2 an egg so if the 5 end up making it to hatch I'll still be ok I think.

I sold 4 guineas,, one hen for sure ..

then I wrapped up all the hoses,, hauled 2 bucketfuls of scrap wood to the burn pile.... then it started to sprinkle and my hands were wet and cold.. so here I am,,

If it gets much colder out, I am going to have to switch to long pants and a sweat shirt .. maybe a jacket , too..

I process all the deer we get. DH skins and "parts". He brings me the quarters in the kitchen and I take it down to steaks, stew meat and burger. I am super picky also - which is why I do our own. I learned from my dad as a kid. I remember taking my deer back to college after Thanksgiving and cutting it up on a piece of plywood set on top of the foosball table. My two male roommates were sorta OK with that, my female roommate acted all grossed out or really cool about it, depending on who was present at the time..
