Would a Duck Egg Count As 2 Chicken Eggs In A Recipe?

Thanks.. duck eggs would generally taste the same as the chicken eggs right? My DH couldn't tell the difference when they were scrambled other than they were fresh.

I think I would just use 2 bantam eggs. Some recipes require "large" eggs. Those, I would use 2 bantam eggs for 1 large egg. I couldn't imagine trying to get a 3/4 of an egg.

Thanks.. I have a Cayuga and a White Crested and the eggs are HUGE! So I will use one of those in place of the 2 chicken eggs! I just didn't know if the yolks would be the issue. The duck egg yolks are large but I don't know if it would equal 2 chicken yolks.

Do you have a small kitchen or diet scale available? I weight eggs of "usual" sizes to make them work out in recipes correctly. In most recipes, size large is assumed.

Here are weight standards...
Jumbo - 30 oz per dozen / 2.5 oz per egg
Extra Large - 27 oz per dozen / 2.25 oz per egg
Large - 24 oz per dozen / 2.0 oz per egg
Medium - 21 oz per dozen / 1.75 oz per egg
Small - 18 oz per dozen / 1.5 oz per egg
