We fry them, stew them, make squash casserole. It's one of the first vegetables we plant each summer. You can cut them, blanch and then freeze them as well. One of my 16 yr. old DD's favorite sandwiches is a fried squash sandwich. When I fry them I slice them lengthwise, salt and pepper, dredge in flour and fry till slightly brown and tender.

Blending the veggies is good if you wanted creamed soup. Creamy squash soup is the best food in autumn EVER.

Totally CORRECT! we wanted creamy soup...like a creamy tomoto soup...but with squash. That was how I learned to make soups in culinary school. The only thing I DIDNT do that I learned in school was I didnt strain it through a cheese cloth. Oh, and the baking part.....my mom told me to do that, it brings out a different taste.
