Ah, but lean meats are probably very practical for you! And there's so many options for that at least! But starches are probably just a mess.

Yes. Meats and hard cheeses are fine. Breads, taters and even many squash are very high in sugars, starches and carbs in general.
flour alternatives (like those for gluten free) are far higher in carbs than regular white flour.

I think the Wellington on the page I linked looks delicious too.

I make a colorful pasta salad that my family loves. It is a cold dish with noodles in fun shapes and lots of fresh veggies. I use ranch on it but a vinegar dressing would be good too. I can do the veggies but not the pasta part. Not sure if you are needing side dishes....
 
Almost all my sides are inherently vegetarian/lactose free anyhow. I don't throw bacon into my potatoes and greenbeans sorta thing. So usually that's pretty easy. Roasted brussel sprouts, glazed carrots, garlic dill potatoes, grilled asparagus, spinach salad, mushroom-onion red wine gravy... Really easy to make lactose free and veg*n so I usually just.... Do. Lots of olive oil and garlic, some citrus and rosemary goes a long way, etc. Skip the gelatin, puff pastry pine trees are a holiday staple, etc.

I'm usually considered a very good cook, and sides are down, but vegan proteins are just... Challenging. Especially if you want that pop of a holiday dish. There's no "Giant hunk of beautiful browned glazed protein" in vegan without buying a processed product like seitan, or tofu meats, etc. It's always a composition, so wrapping it in a pastry dough or a vegetable that looks beautiful seems like the #1 ways to go.
 
I do a 5 nut patty that even my meat eaters adore. It does require an egg to bind your ingredients. Not sure what you could use instead of the egg. Choose any five nuts & process . I like mine still a little chunky. Add a grated carrot & egg. Combine then shape into patties & fry till golden brown. Piled up it looks pretty good.
 
I feel like a lot of these would be great for cartoon nights with my friends. Just not very holiday centerpiece-y.

I think I'm going to dig deeper into the wellingtons and see what I can come up with.
 
You literally posted a recipe with vegan cheese after I said no to that like six times fren. :p After posting a bunch of soups/stews.....!

And no, hummus wraps are not what I'd call holiday centerpiece. XD Nor a plate of home-made boca burgers.

It's pretty exhausting pointing to the first post over and over again....
 
You really don't have to be rude you can take out the cheese and substitute it for something else. I don't use recipes word for word I usually make my own because I have been plant-based for over 10 years.

No my dishes aren't boring and no people don't say that they look awful on the table...

I didn't think that people actually use recipes word for word but I guess some people can't be inventive.

See, I don't cook plant based so "substitute the vegan cheese for ?????? or else you're just a nob" isn't helpful, especially since very little actually tastes like cheese... And neither is ignoring everything I posted. They're probably great tasting recipes - and definitely don't meet what I asked for in the OP.

Like, did you wanna be helpful or did you wanna just post a recipe you like? Cause the latter is nice but the first is what I wanted, but almost everyone posted "It's not what you wanted but use this anyhow". And it's VERY tiring.

Look at this, the post after you literally posted three words that is the exact opposite of what I asked for. I mean, come on.....
