Any Home Bakers Here?

I punched it down last night thinking this will never work, but look at it this morning! Woot!
 
There are several natural ways to clean an oven. Peroxide is recommended for the window and door. I’m sure vinegar is on the list too.
I was told when the oven was being installed not to use the self clean. It really is hard on the appliance, and does get very hot. Like children and animals must stay out of the kitchen hot. I almost burnt myself not knowing how hot it got.
 
I now realize I was supposed to make two loaves out of this dough, but I just have one large loaf. I guess I made this mistake because when I buy Seattle Sourdough, it comes in one big loaf like this one. Here's my question, does this effect the temperature and time for baking?
Time, but not temperature. I’d be worried about the bread being everywhere.
Time wise, add fifteen minutes, and check.
