Wow I didn’t realize all the good recipes that are posted.. I bake bread and pie crust the most. But I don’t measure any ingredients it’s all a little of this a pinch of that kinda thing. I am only 38 but that’s how I learned to make it.
This might be a good time to learn a new skill. If you're home anyway you can learn how starters work and then next time your yeast stores won't matter because you'll have options.I only use yeast also

I do those two thing by feel and how it looks. I think if i even weigh it it wouldn't turn out.. lolWelcome!
Get a scale and use that for the ratios. In baking there is a bit of chemistry involved in most baking. Bread can be more of a feel thing.
My Oldest DD is like that with pie crust. She likely measures now though
