Another Sunday Morning Breakfast - Pancakes w/ Recipe

It is yet again another fine Sunday morning. My 2 yr old son woke up at 6am. "Ready eat!" He said until I got up and took him to the kitchen to start his breakfast.

This morning is pancakes. Not quite silver dollar size but not plate sized either. We like them somewhere in between and piled high.

Not hard to make.

Mix and pour.

Flip and eat.

Some like just butter and syrup.

Some like strawberries and cream.

But we all like them.

This is a very thick batter with the buttermilk. If you don't have buttermilk use 2 cups of regular milk. The batter will then be thinner. Pourable with milk. Scoopable with buttermilk. Delicious just the same.

MissPrissy's Sunday Morning Pancakes

2 cups self-rise flour (Scrambled - I use Martha White Self rising flour for this one)
1/4 cup sugar
2 tsp baking powder
1/2 teaspoon salt
1 cup milk
1 cup buttermilk
1/4 cup butter (melted)
2 large eggs (beaten)
1 tsp vanilla extract

Sift the dry ingredients together.

Mix the wet ingredients together.

Pour the wet into the dry. Mix but do NOT over mix -just until incorporated.

Set aside and alow to stand while your skillet or griddle is coming up to temperature.

Very VERY lightly oil your griddle.

Use a 1/4 cup scoop and pour batter onto the griddle.

When the bubbles rise and the batter looks a little set give them a quick flip.

Once browned, remove from griddle.

Stack and serve with butter and syrup.


One more thing - I am from the south. I like cane syrup. We don't do maple. You eat what you like. We just eat cane syrup.

For those of you who don't have self rising flour in their cupboard...
1. Using a dry measure, measure the desired amount of flour into a separate container.
2. For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt.
3. Mix to combine.
 
So to this recipe add an additional 1 tbsp baking powder and 1 teaspoon salt, though I might cut the salt down to maybe 1 tea in total, cause I think they might be too salty! If you don't have buttermilk you can also substitute yogurt, but I would thin it out with a little milk first! thank you miss prissy, I think I'll make them right now!
 
im not going to have any breakfast this morning, i left the house at almost 7:00 pm last night and got home at 7:15 this morning, helped cooked over 600 chicken halves on some large pits for a fund raiser for kids. also 90lbs of beans were cooked but i didn't have any thing to do with that part except lugging them into the hall where they will be served at lunch today.
their menu is bbq chicken beans butter noodles bread something else, i cant remember what it is, i'm just going to go to bed. but miss prissy your breakfast look so good.
