I'm sorry your neighbor is feeding the deer and trying to make pets of them. Wild deer can carry several disease pests, ticks and fleas and such. Not to mention being attractive to carnivorous animals. Who will in turn go after your fowl.
If you have men or pubescent males in your life, have them urinate at the place where the fox took the birds. Also get some hair from the local barber shop and sprinkle it there and various other places around your property. The urine will keep the fox away, the hair will keep the deer away.
Some questions please : 1. Are ducks harder to process than chickens?
2. If so, how much harder?
3. Are they cooked the same way?
4. What about eggs? I've heard they have a stronger flavor, and can be rubbery, is that true?
5. Would singeing be best to remove all the pin feathers and down?
I'll be processing some older birds soon. I do have a pressure canner. I've never pressure cooked chicken before. Does anyone have a really good recipe? Also, I've never done chicken and dumplings before. Help!

Personally, I just do 24 hour rest before freezing. If I want it for supper that night, I rinse in ice water really well, then put in the crockpot. No rest time requed. Slow cook for about. 3-4 hours, the meat will literally fall off the bone!
I've done rabbits and chickens, this fall I'll be going hunting for the first time, so whatever I bag will be slated for freezer camp, and I can clean my own fish. If /when the S.H.T.F. I won't have to worry about hunger being an issue. Oh and some of these skills I'm just now learning, and I'm 52.
