Canned 7 jars of applesauce with my kids today! A local organic farm had “seconds” (ugly) apples for cheap, so I bought 15 pounds. WOW are they delicious and a nice variety of heirloom apples! 😊

Opened a can of green beans for dinner tonight. Such a nice change from the winter veggies we’ve been eating! The pickeled onions tried canning this year came out amazing as well. So glad to have a shelf full of canned goods to help out this winter!

Absolutely gorgeous braid! I only grow hard neck as that’s what I’ve heard is best for my area, so I use string to make little bouquet-like structures, and hang them in a cabinet in my insulated garage. It usually stays between 40-55 degrees until it gets warm in the spring, so the garlic...

Got the other half of my garlic cloves into the ground today! I think I planted about 100…a bit less than last year but I now know how much we use on a yearly basis after giving some to family. 2 bulbs per week up until about June when the scapes start to make an appearance. It doesn’t last much...

I cooked two big saucepans of frozen tomatoes down today. Planning to can them tomorrow for sauce. I can’t remember, I can add spices to the tomatoes before canning, right? 1tsp lemon juice per pint and 1tbsp per qt?

Thanks. Maybe I’ll open the first one at home and boil, see that it tastes ok and doesn’t smell weird, boil for the 10 minutes. Then I can do a quick microwave boil with the rest at work. I have a nice mug that should work.

So a few of the books I was looking at say that you should boil any soups for 10 minutes after opening the can. Has anyone else ever heard this? I canned my soups for work lunches…we only have a microwave there to heat up. Do I need to open in the morning, boil at home, and store in the fridge &...

Thanks, I did 80 minute pints just to be safe! Looks like it turned out great, and now have some grab-&-go lunches for work when there’s no leftovers to grab!

I think I’m going to raw pack potatoes, green beans, onions, carrots, celery, and barely cooked chicken. Assuming all of those would be fine in a soup after what everyone posted and scouring some canning websites. I will most likely do pints so they are take-to-work size and I don’t get stuck...

Thanks! If I switch some of the veggies, do you think it would make a difference?

    Preserving Your Harvest

Question for any pressure canning pros. Can I throw homemade vegetable soup in cans and pressure can it? I made a medium sized batch of soup today, but I still have tons of vegetables and was thinking I could put a few pots on at once in the next few days, and save myself some freezer space if I...

    Preserving Your Harvest

Today I canned 8 jars of golden beets. With kids, dogs, & chickens, I can’t seem to do more than one type every few days. Still waiting on the tomatoes, will probably have to buy some more canning jars as there are only a few left! Also used up some too-ripe bananas and made gluten-free banana...

I dehydrated all of the cloves from my damaged garlic bulbs tonight! Should be dry by morning. Last year we had a few bulbs go unused, so I am making garlic powder and dried minced garlic from those. Any other ideas of good veggies to dehydrate/rehydrate?

Another 8 jars of beans, and my favorite, 7 jars of pickled red onions!

    Preserving Your Harvest

Hubs just got me a pressure canner! Woot! Hoping to start canning some beans and beets tomorrow. Pickles & relish will be soon after in the regular canner, as the cukes are finally coming in at a good amount! Still waiting on a red tomato…this is nuts…I planted a bunch of paste variety for...

My bush beans petered out, but my pile beans are just starting to rock! Hopefully canning some over the next few weeks! Anyone have a good pressure-canned beet recipe? Looking for something not pickeled if possible.
