Quail getting into position to break out of the egg
Bobwhites, Blues, Gambles, Mountain quail are white meat. Cot's are dark meat, even the A&M's. I never have eat'en a Cot, so idk how they taste. I didn't know they were dark meat either, for the reason stated above.
 
Nope, they are white meat, I think they have the taste between a chicken and a turkey.
I think it can depend. I know that Chukars are white meat. They are partridges. I also know that Hungarian Partridges are dark meat.

I had Corsican Red legs but never ate any of them, too rare!
