Selective breeding....ie; if you breed hens that lay large eggs, usually their offspring will lay large eggs but not always....some breeders breed for size of the birds others for size of eggs, some breed for both...after several generations of doing this, the results will be larger eggs or heavier bird weights. Also, environment plays a part.Why would they be so big?

That is the temp - after being open for a whole candling session. The humidity is the bottom number. Inside the incubator it has been running around 25-30% after a +5 calibration adjustment.Have you hatched out at 75% humidity before?
