I don't even eat eggs... I sometimes get a sandwich at Dunkin Donuts with egg and vegan sausage, but that's rare.
They have a lot of vitamin D--one of the few foods that have naturally-occurring vit D. Do you have a bad reaction to them?

Not really... I just stay vegan because eating other things like eggs makes my body want to binge eat. I tend to eat lots of veggies, leafy greens, fruits, beans, and potatoes.

I'm growing all my own food this year

Wow! Good for you. We're getting started on gardening. Built a greenhouse last fall, but it's unheated. šŸ¤·ā€ā™€ļø Maybe we're done with the below zero temperatures, and maybe not. I have plants in the basement that *have* to go out somewhere soon. I've got to kick my hens out of the greenhouse and get my raised beds built in there. Sooo, we most likely won't manage *all* the food, but we've got meat & eggs figured. :lau

I have a lot growing so it'll be months before I can eat all my own food. Tonight I did have lettuce from my garden.
 
This morning around 4 am
my experience is that they hatch 12-24 hours after external pip....most hatching overnight or while I’m at work......no need for concern until after 24 hour mark

I had to settle for lettuce from my living room. There are just now volunteer sprouts coming up in the garden. The new asparagus is just barely peeking through the dirt.
