Where are you planning on ordering eggs from?
Do have have laying birds now?
Why are you trying to keep the humidity at 65%?Our "simulated hatch" will be done on Tuesday, at which point I'll finish my chart and make sure I'm feeling confident in my ability to control the incubator (so far keeping the humidity at 65% has been challenging). I'm not sure yet where I'll order from... I only want to add a few birds to my flock, and most of the places I've found only sell 20-30+ eggs minimum, so I'll have to process or rehome the rest and I need to make sure my fiancé is prepared to start processing birds that soon.

I find that eggs do better if you keep the humidity lower...Oh, I guess because I thought that was the recommended humidity for "lockdown?" I see so many conflicting recommendations though (and just finished reading through the big "dry hatching method" thread, too). The only stable values I seem able to keep for more than a day at a time are 25% (no water added), 55% (one well filled), or 75% (2 wells filled). The Hovabator instructions said 45-55% for setting, 65% for hatching, so that's what I was shooting for.

at 35% through out and only bump it up once you see an external pip and then only to 50ish%.
As far as how much water you need to put or not put in your bator to make these numbers....is something you will have to play around with and learn.
