The skin is pretty thin, easier to skin them and cut up both sides of the spine and make the bird lay flat. Easier to get the guts out that way too. Then you can wrap in bacon and cook.
My main objection is its lack of a tune. I haven't been in a straight jacket just yet and I'm doing my very best to continue life that way!
I just checked. My quail are only 6 weeks old. No way they'll make it to 12 before fighting; they're already starting to vocalize at each other and almost-chase. Maybe I'll feel them up tomorrow. Could have sworn they were more like 8--10 wks.

Plucking was a crap shoot. Ending up skinning anyway.
