We usually don't brine our birds, because the store bought are usually already brined and the seasoning has salt already. Certain family members are supposed to watch salt intake. I'm hoping 3+ days in the fridge will be good, we won't start cooking it until Sunday afternoon. Probably will try to treat it like a small turkey when baking.A simple 24 hours in the fridge and then a minimum of marinating 8 hours in a mild salt and seasoning brine will help.

Good to know. I brined the CX last couple times and the fresh rosemary permeated the meat. Truly delightful. Everyone commented and liked. I plan to plant 2 more rosemary bushes. Interested to see if the chickens will leave them alone. Rosemary should be able to propagate from cuttings. Put them in a glass of water until roots start or use rooting hormones and put in dirt.Good to know.
