A simple 24 hours in the fridge and then a minimum of marinating 8 hours in a mild salt and seasoning brine will help.
We usually don't brine our birds, because the store bought are usually already brined and the seasoning has salt already. Certain family members are supposed to watch salt intake. I'm hoping 3+ days in the fridge will be good, we won't start cooking it until Sunday afternoon. Probably will try to treat it like a small turkey when baking.

Slow roasting sounds like a good plan. We expect a full report!

Good to know. I brined the CX last couple times and the fresh rosemary permeated the meat. Truly delightful. Everyone commented and liked. I plan to plant 2 more rosemary bushes. Interested to see if the chickens will leave them alone. Can rosemary be propagated off cuttings?

So $200 for a complete incubator plus shipping.
Compare to $70 for parts (turner and thermostat). I've pig tails, light sockets and what not laying about. Need to lay hands on a fan whether it is a computer or other fan. Then put it in a pile. Call it $100, hardware included. Should be interesting.

Rosemary should be able to propagate from cuttings. Put them in a glass of water until roots start or use rooting hormones and put in dirt.
 
Speaking of "car accidents"....here's one for everyone's moron list. :barnie
I had to travel for a conference yesterday - was held at a HS/Adult Ed Center. I'm parked. Picture a parking lot....rows of cars, all rows/spaces equally lined up. I'm in the very last spot of a row. I'm in a small convertible - white, top down - I'm pretty sure you can't miss me with most of the parking lot empty. I watch a Honda just drive straight through all of last spots 5 rows in front of my row, directly in a collision course with me - they driver's head is down - clearly looking at a cell phone. He looks up just in time and stops in the last spot of the row directly across from me. The guy gets out, still on a cell phone, walks towards my car and literally walks into my front hood/bumper with his shins. He didn't even appear to notice my car or me sitting in it watching him do all this. By the way....my car is steel...not plastic...so I know that had to hurt. He looked up in total shock that he had done this, did some sort of PeeWee Herman laugh and walked on. :eek::eek::eek:

I just don't understand. :idunno
