I like the mix of left over and fall honey more than the sweet spring honey that the family likes.
Hubby likes the stuff we just extracted better than the "sweet water" we got in June.

Our June honey tasted different to me. I think the honey I'd been buying from my Bee Friend Ed was fall honey. Ours might be the first spring honey I've ever tasted.

Our fall has a slight throat burn (heat) that my daughter and I like and tones down the sweet, our spring is predominantly Blueberry and is a smoother sweeter honey. Still good and take my daily dose.
 
Our first extraction was from black locust, Russian Olive and whatever else the bees found along the way. Very smooth and not overly sweet. I've really been enjoying it.

I'm looking forward to the spring honey of apple and stone fruit.
