Four Tortillas : makes 10 six inch tortillas.
Ingredients:
2.5 cups of unbleached all purpose flour.
1 tsp salt
6 tablespoons vegetable shortening at room temp
3/4 cup of warm water.
Directions:
1 - put flour and salt in a medium bowl and stir to combine.
2 - work shortening into the flour until well blended. Add the water and work all in to a ball. Transfer to a lightly floured surface and knead til smooth.
3- Divide the dough into 10 equal pieces and shape into rounds. Cover these loosely with plastic wrap and let sit at room temp for 30 - 60 minutes.
4 - roll each ball into a 6 inch circle of about 1/8" thick.
I cooked them in my new International Chef ( pizelle, etc waffle type iron), but they just need to be "dry fried" - brush pan with vegetable oil, cook on med-high to high til done.
We used left over ham with shredded cheddar cheese to fill, reheat just long enough to melt the cheese and loaded them up with black olive/sour cream/salsa and guacamole topping . Next time will be prepared with better fillings on hand
