I do the same thing. The leftovers from the week get cubed, dried and put in the freezer until I have enough.
I'm going to try a savory version next time, still looking through recipes though.

I don’t know about using half oil and half vinegar (it’s usually 3 parts to one), but I just saw a tip. When the jelly jar is almost gone, add your oil and vinegar, salt and pepper. You now have a fruit vinaigrette.
