Any Home Bakers Here?

I have a question about baking bread.

The recipe I use says to let the dough rise 2 hours til doubled for the first rise. If it doesn't take 2 hours to double can I punch down and divide for the second rise?

For the second rise, which is supposed to take abt an hour, if I'm not happy with loaf height how much longer can I wait before baking?

first rise I usually wait 90 minutes you could go another 90 but never had it take more than a hour

Sorry, busy day...
These are heavy buns...not light and fluffy if that makes a difference to you...at least they were for me:gigI let them rise for about 45 minutes even though it said 10. I used quick rise yeast.

Am I too late? I set 27 today. First incubation in some years. Go big right?

I was real pleased when I did bread bowls that turned into hamburger buns or peanut butter and jelly buns I used Ron's white bread recipe it is 3 loaves cut into 10 or 12 buns after the first rise
