Any Home Bakers Here?

My sisters and I are throwing an 80th Birthday party for our Dad on Saturday. I finished my picture boards last night with my little sister. I have 10 pounds of German Potato Salad to make tonight and first thing in the morning we are going to shred the 30 pounds of pork shoulder that DH smoked last weekend. And I need to make my BBQ sauce recipe for the pulled pork as it is just smoked with a dry rub. Any left over sauce will be canned for future BBQ. Hopefully, Sunday will be a day of rest.
 
@Aria One question about the directions for the bread - I am guessing that when you move the dough to the cast iron that the parchment paper ends up on the bottom of the pan, so after 30 minutes I pull the bread out of the pan, remove the paper and put it back in the pan - right? It makes sense to do that to get a nice brown crust on the bottom.

Just one comment here - be attentive about what parchment paper you use - some parchment paper is only rated to withstand 400 degrees and will burn at a higher temp. Been there done that, and burnt parchment paper is not so tasty. Now I only buy the stuff rated for 450 degrees.

I have used parchment paper and it is FINE..just a bit brown
on the outside of the Dutch Oven...no problem. And rjohns
has done this too with Debby's Recipe...no problem. I have another recipe (I have not tried) with 8 cups of flour. Will try that one later this year. I have made this bread many times...
and it works fine with the parchment. I purchased my parchment non stick at Walmart. NO Problem. Aria

When I bake in the enameled cast iron dutch oven, The bottom of the bread browns too much some times. I don't have to remove the parchment paper.

I get parchment paper from Costco. It goes up to 450F

Guys, I just wanted to put a warning out there so others don't have a problem. It was just a suggestion to check the box for the rated temperature - it is written on the box somewhere.

I wasn't suggesting that you don't use parchment paper.

I usually don't have a problem with the parchment paper either. I use it all the time. I bought a different brand once in a pinch; and when I put it in the oven at 450 it turned black & smelt burnt. Tiny little blue flame on the edge of the paper. The stuff I bought was only rated for 400 degrees and it was written in small print on the end panel of the box.
 
I am with Ron on that buy my parchment at Costco but almost never go over 450 on anything anyways .. truth be known I bake all my breads in bread pans if it is a huge loaf have two larger pans... Can we all agree end of era VW is killing the bug again .... :th
