Any Home Bakers Here?

This one is a keeper! Be sure you have the Bailey's Irish Cream on hand, the glaze is amazing (and would work nicely on other baked goods).

When I went to the liquor store, I couldn't remember how much this recipe called for so I picked up this size bottle. Turns out, I only needed 2 Tablespoons :lau Guess we'll have plenty of extra.

Baileys Dark Chocolate Guinness Bread**
**This is similar to a quick bread
Bread:
1 1/2 Cup AP flour
1/4 Cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1/2 Cup semi-sweet chocolate chips
1/2 Cup walnuts, chopped
1/2 Cup unsalted butter, softened
1/2 Cup brown sugar, packed
1 egg
1 Cup Guinness

Glaze:
1 1/4 Cup powered sugar
2 Tab. Baileys Irish Cream
2 tsp. half and half

Bread:
1. Preheat oven to 350*. Spray a 9x5" loaf pan with no-stick.
2. In a bowl, mix together the flour, cocoa powder, baking soda and salt. Set aside.
3. Using a mixer, beat butter and brown sugar until fluffy. Mix in egg. Add Guinness and mix for 30 seconds, just to break apart the butter mixture into the beer.
4. Slowly add dry ingredients in with the wet ingredients, mixing gently. Mix just enough to combine.
5. Gently fold in chocolate chips and walnuts, then pour into loaf pan.
6. Bake for 45-55 minutes or until a toothpick comes out clean with a a few moist crumbs.
7. Let cool in the pan for 10 minutes, then remove from pan and transfer to a rack to cool completely.

1. In a small bowl, whisk together all the glaze ingredients. Pour over bread.

This seemed like a lot of glaze but it was so good with the bread, I might make an even larger batch next time.

I wonder if Homemade Irish Cream would work for the glaze? I don't buy it from the store anymore. Probably not a good idea to use it in the glaze with the raw eggs in it.

I made Tom & Jerry Batter and have it in the freezer for us to enjoy. I can't believe I never had these before, my family always had these at Christmas and I didn't think I liked them. DH grew up with these for the holidays, but the stuff you get from the store is so awful, :sick :sick It is no wonder no-one drinks them any more.
DH insisted we buy some one year and we ended up throwing it away. I mentioned that I had the family recipe, if he wanted to try it I was willing to make it. When he tried it he was like :celebrate.
