Any Home Bakers Here?

This one is a keeper! Be sure you have the Bailey's Irish Cream on hand, the glaze is amazing (and would work nicely on other baked goods).

When I went to the liquor store, I couldn't remember how much this recipe called for so I picked up this size bottle. Turns out, I only needed 2 Tablespoons :lau Guess we'll have plenty of extra.

Baileys Dark Chocolate Guinness Bread**
**This is similar to a quick bread
Bread:
1 1/2 Cup AP flour
1/4 Cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1/2 Cup semi-sweet chocolate chips
1/2 Cup walnuts, chopped
1/2 Cup unsalted butter, softened
1/2 Cup brown sugar, packed
1 egg
1 Cup Guinness

Glaze:
1 1/4 Cup powered sugar
2 Tab. Baileys Irish Cream
2 tsp. half and half

Bread:
1. Preheat oven to 350*. Spray a 9x5" loaf pan with no-stick.
2. In a bowl, mix together the flour, cocoa powder, baking soda and salt. Set aside.
3. Using a mixer, beat butter and brown sugar until fluffy. Mix in egg. Add Guinness and mix for 30 seconds, just to break apart the butter mixture into the beer.
4. Slowly add dry ingredients in with the wet ingredients, mixing gently. Mix just enough to combine.
5. Gently fold in chocolate chips and walnuts, then pour into loaf pan.
6. Bake for 45-55 minutes or until a toothpick comes out clean with a a few moist crumbs.
7. Let cool in the pan for 10 minutes, then remove from pan and transfer to a rack to cool completely.

Glaze:
1. In a small bowl, whisk together all the glaze ingredients. Pour over bread.

This seemed like a lot of glaze but it was so good with the bread, I might make an even larger batch next time.

The houses had frosty roofs the morning. There was no frost on the car window though. It was close to 32F but not quite there
 
We were at 21* F this morning - forecast is for a high of 27 * F. We will only get up to 14 degrees on Friday and single digits overnight. Welcome to winter... good thing Dh picked up a couple more heated waterer bases.

We've been in the deep freeze the past couple of nights too. Down in the 7*-9* range. Today's high is supposed to be 20*. And windy of course.

You remember WY winters I bet!

Debby, We live in Sauquoit, New York....about 10 miles South of
Utica, New York and 50 Miles from Syracuse, NY. Our Summer Cottage is in Hamilton, New York...the home of Colgate University.
