DMC, here's the coconut frosting recipe. This makes up enough to cover the top side and in between 2 layers of cake. If you want to cover an entire 2-layer cake with it, you'll have to increase the ingredients.

Coconut Buttercream Frosting
1/2 Cup unsalted butter, softened
1/2 Cup vegetable shortening
1 tsp coconut or vanilla extract
3 Cups powdered sugar
2 Tablespoons (approximately) milk
3 1/2 oz. sweetened coconut flakes

* Beat butter & shortening until smooth
* Beat in extract
* Gradually beat in sugar until well blended (will look dry)
* Stir in enough milk to reach desired consistency
* Fold in coconut flakes

Note: If you like nuts, you can add 1/4 Cup chopped pecans.
Thanks Debby! Did you like it?

I mixed Rolls for Floyd and later will mix Sourdough Bread With
Ron's Starter. I am using: sunflower seeds, pumpkin seeds
whey protein power, wheat germ, sesame seeds, and flax meal in this Sourdough Bread. All seeds ground. Aria
That sounds like very good bread. Have fun baking it today!

Oh yes, I make the chocolate cake quite often with that frosting! It's one of DH's favorites.
I made the perfectly chocolate cake with the frosting that is in the recipe for the Neighbor when a relative died. Now we have a request to make the same cake for the Grand Daughters 16th birthday. They call it comfort cake.

Here's my fancy rolling pin, I got it off Etsy from some place in Poland. I was worried about messing it up but now that I've seen how pretty the cookies turn out. it's very tempting :)
