Thanks Debby! Did you like it?DMC, here's the coconut frosting recipe. This makes up enough to cover the top side and in between 2 layers of cake. If you want to cover an entire 2-layer cake with it, you'll have to increase the ingredients.
Coconut Buttercream Frosting
1/2 Cup unsalted butter, softened
1/2 Cup vegetable shortening
1 tsp coconut or vanilla extract
3 Cups powdered sugar
2 Tablespoons (approximately) milk
3 1/2 oz. sweetened coconut flakes
* Beat butter & shortening until smooth
* Beat in extract
* Gradually beat in sugar until well blended (will look dry)
* Stir in enough milk to reach desired consistency
* Fold in coconut flakes
Note: If you like nuts, you can add 1/4 Cup chopped pecans.
