I was told it was because of food particles.
Food particles will decay properly in a septic tank. I am wondering if you are confusing or the person who told you is confusing what is said about a garbage disposal with a dishwasher.

It is recommended that you should not use a garbage disposal if you have a septic tank.

DH insisted that Building Codes require that we install a garbage disposal when we installed a dishwasher. I don't know if that is true or not, but I hardly ever use the garbage disposal.
When I do use it, it is usually when I peel hard boiled eggs OR when I have citrus peals and want to freshen the disposal. It does get a little funky not using it much and all the water from the dishwasher goes through it.
Most scraps get sent to the compost heap.

It is too dry here for a compost heap to work well. I just bury all my food scraps minus bones in the garden where they decompose quickly.

I try hard to keep stuff out of the disposal too and we have city sewer here

Take 1/2 a cup of sourdough once every two weeks down

Back in Wyoming, we had a friend who would put all her scraps down the garbage disposal. There were numerous times we showed up for supper and found them trying to "unstuck" the disposal because she jammed too much potato peel down it, lol.
Potato peelings will definitely clog a garbage disposal!
