There is no health benefit to gluten free unless a person is diagnosed by a Doctor with celiac disease. Most gluten free products are very high in sugar and fat too.
For about 95% of people, Gluten is actually very good for them too. Many are out to make money so make up stuff to sell products and books. In many ways it is a new version of Snake oil salesman. The Internet is full of it
All the macaron recipes I’ve seen have almond flour. I’m only making these to see if I canI personally do not like almonds. They are resting uncooked on the cupboard right now and are looking like they will be a fail. I have never had these so I don’t even know what the texture should be.

I understand that! DH doesn't get it when I get irate with something not turning out the way I'd pictured it.
